Cantina Laredo

Had a great lunch in Omaha, Nebraska, with a few clients. It was at Cantina Laredo at Midtown Crossing. I had two enchiladas - Enchilada De Espinaca (sauteed spinach, monterey jack cheese & mushrooms w/a sour cream poblano sauce) and Enchilada De Pollo (pulled chicken with a sour cream poblano sauce.) The plate was so pretty, I just had to take a picture.

Strawberry Napolean

Start with Puff Pastry, cut it into 3 rows and bake until golden brown. Add a layer of powdered sugar mixed with a little milk.
The mixture is a vanilla instant pudding and whipped cream folded together.
Layer on strawberries that have been sitting in sugar. Do this for two layers.

Cover with the layer that has the powdered sugar layer. And, look at this yummy treat.

Here is what it looks like when cut in half. It was really good, and there is nothing left.

Valentine's Day Dinner

Ran out of Ricotta cheese for the manicotti, so I used an herbed Goat Cheese. It was so yummy. I was also out of my fresh red sauce, so had to use a jarred sauce - I doctored it up, so pretty good.

Circle of Excellence Dinner

The lovely butter with the hotel's insignia.

Salad with a yummy Parmesan crisp. Tomatoes were a little soggy, but the dressing was delicious.

Asparagus Risotto and a seared scallop. The risotto was slightly gummy, but had a really nice taste.

Delicious Filet with Lobster Mashed Potatoes. The steak was a perfect medium rare. However, they failed to put ANY seasoning on the entire plate.

And, dessert. It was chocolatey and pretty good. My favorite part was the fresh blackberries & raspberries.
