Had a great lunch in Omaha, Nebraska, with a few clients. It was at Cantina Laredo at Midtown Crossing. I had two enchiladas - Enchilada De Espinaca (sauteed spinach, monterey jack cheese & mushrooms w/a sour cream poblano sauce) and Enchilada De Pollo (pulled chicken with a sour cream poblano sauce.)
