Dutch Apple Pie

So, Ed decided it was a good idea for a "trial pie" before the Holidays. Dutch Apple Pie was the craving. The recipe comes from my MIL, whom I love dearly.

Start with 6 cups of Apples, I used a mix of Granny Smith & Macintosh. Sprinkle with cinnamon, flour and sugar. The topping is a stick of butter, 1/2 cup brown sugar & 1 cup of flour.

I decided to use a deep dish premade crust. My pie plates are in storage & I was not going to buy another one. When I put the apples in & added the topping, the pie was unbelievably tall. Knowing that it was going to sink, which meant drips of deliciousness, I put it on a parchment paper covered cookie sheet before putting in the oven. 15 minutes at 350 & then 1 hour at 325.

Ta Da - here is my finished pie. Of course, I do not eat pie, so will have to wait for Ed to get home from the Chiefs game to taste test it. This will be dessert after a dinner of roasted pork loin & Yukon Gold potatoes.

Special K Bars

Start with 5 cups of Special K cereal.

In a pot, bring 1 stick of butter, 1/2 cup brown sugar, 1 cup Karo syrup & a pinch of salt to a boil.

Boil for 3 minutes. DO NOT walk away from this boiling deliciousness.

Pour over the Special K cereal and mix quickly and thoroughly. Press into a greased 9x13 pan. I am thinking of adding a layer of chocolate ganache. If you want this to set quickly, put it in the fridge or freezer. I left mine on the counter for a few hours and it was so yummy. Thank you goes to Love Veggies and Yoga for the recipe.

Banana Muffins

I had a lot of bananas that were at the point that I did not want them in my cereal. So, with the cooler weather, it was time to bake. This is a recipe I have had forever. I had to double the recipe, because of all the bananas, and made 1 loaf of banana bread & 12 muffins. I took 6 muffins to the neighbors that moved in across the hall on Saturday.

The recipe is really easy, but I think I will keep it to myself for now. Who knows, maybe it will show up on this site soon.

Key Lime Pie

I made a key lime pie last weekend. It was a new recipe. I combined a couple of recipes I found online and it looked pretty freaking good. Ed said the only thing wrong with it is that it is not green enough. Not sure what he was expecting. Lime juice & zest does not equal a bright green color.
