Weight Watchers

I joined Weight Watchers this year. The temptation to eat my own delicious creations has made it difficult to bake. However, I will still be baking for my customers, so pictures will still be uploaded.

I am going to be showcasing my Points Plus approved meals on this site. One that looks good is a Cheeseburger Casserole made with ground turkey.

Chocolate Covered Homemade Marshmallows


For the holidays, I made so many treats that I handed out to clients. One of those treats was homemade marshmallows & my own hot chocolate mix. I had some leftover marshmallows and decided to try something new this year - I dipped them in chocolate!


Roasted Pork Loin & Potatoes

This pork loin was just amazing. It lasted only 2 days in this house. It was a healthy meal that tasted just delish.
The loin is massaged with Olive Oil, Garlic, Rosemary and Salt & Pepper. Then, it is placed fat side up in a shallow roasting pan.








The potatoes are cut into smaller pieces and then tossed around in the same marinade as the pork loin.





After the loin is in the oven for 20 minutes at 400 degrees, turn the heat down to 350, place potatoes around the loin and return to oven. Cook for 50 minutes until the loin is at the proper temperature, 165.

Perfect Pumpkin Pie

I was finally able to make a perfect pumpkin pie. I did not take pics all the way through, and I am sorry about that. However, this is freaking beautiful! I do not like to eat pumpkin pie - it feels funny on my tongue. But, the hubby ate it all.
